I hope your new year is off to a beautiful start!
I have been working on my many goals for the new year. One of my goals was to eat more fruits and veggies. Now, for those of you who know me personally, or follow me on Instagram, may know that I already follow a vegan, gluten free, plant based diet. I eat plenty of fruits and vegetables as it is, but I have found myself gradually reaching for less desirable food options. There are plenty of junk food treats that are gluten free and vegan. While it is ok to indulge every once and a while, I noticed I have been overindulging lately. Between the holidays and time at home, I've been hitting the sweets a little too hard.
Well to kick-start the new year, I have to decided to join in on Fully Raw Kristina's 21 day fully raw challenge. This challenge is a 21 day high carb, low fat raw vegan plan. That means: no refined sugars, no gluten, no animal products, and no cooked foods. What? Yes, you read right. No. Cooked. Foods. Only raw, living, fresh foods.
This challenge follows the 80/10/10 format, which is one that I tend to stick to. 80/10/10 means that your calories are coming from 80% carbs 10% fat and 10% protein. If you want to find out more about the 80/10/10 lifestyle I suggest you read this book here.
I tend to follow a mostly raw diet until dinnertime, where I usually have some sort of cooked food. I am really excited to step out of my comfort zone and try staying fully raw for an extended amount of time.
Today was the first day, and it went great! I had juices until dinner time, and a giant salad for dinner. I'm already feeling lighter and my skin is looking brighter.
Throughout this 21 day challenge, I will be posting recipes, updates, and tips that I learn along the way.
My main goals to accomplish from this challenge are not only to eat more fruits and veggies, but try something that I have never done before. I am SO excited to stick to this for the 21 days!
