Recipe: Spicy Raw Cashew Cheese + Sushi

Cheese. It is the one thing people always ask if I miss when they hear I follow a plant based diet. Sure occasionally I crave a slice of cheesy, greasy pizza, but my answer is always no. Being lactose intolerant, cheese made me sicker than it made me feel happy when eating it.

But making delicious alternatives to cheese, I'm all about that!

This recipe is easy, and you only need to soak your cashews for a few hours. I started soaking them while making breakfast, and I drained them a few hours later. Soaking them just makes them easier to blend.

Spicy Raw Cashew Cheese

1 cup of raw cashews, soaked
2 T Nutritional Yeast
4 T water
1 T soy sauce, Nama Shoyu, or Tamari
1/4 t crushed red pepper, or to taste
1/4 t garlic powder
1/4 t onion powder
freshly ground black pepper to taste

Combine all of the ingredients in a food processor or a blender, and mix until smooth and well combined. If you want a thinner cheese, use more water.

I used some of this spread in a raw nori roll. It was DIVINE! I spread my spicy raw cashew cheese on the nori and added in raw asparagus, onion, and zucchini. I also made a larger roll of avocado, mushrooms, carrot, and zucchini. I didn't miss the rice at all! Here are some sushi glamor shots...
