Recipe: Creamy Avocado Lemon Dressing

With the weather hitting the 90's every day this week, all I want is cool, refreshing foods. I've been eating watermelon like its my job! What a great job that would be...

I'm trying to include greens in every meal, so I'm rocking a salad pretty much every day. Which, I love. Salad is my favorite food! Yes, I may be part rabbit, but I'm ok with this.

This dressing is tart, creamy, and oh so easy to make!

Creamy Avocado Lemon Dressing

Serves 2

1 lemon, juiced
1/2 avocado
2-3 T water, or more if you want it thinner
1 t raw local honey, agave, or maple syrup
Crushed red pepper to taste

Combine all of the ingredients in a blender and blend until smooth.

Seriously, that's it! I want to try this with a little sesame oil or tahini. Yum!!!

I put this on a salad of mixed baby greens, zucchini, onion, and flax seeds. So filling, and so tasty!
