This recipe is easy, inexpensive, and a delicious weeknight meal! I love to make a double batch and take it to work for lunch.
Spicy Thai Inspired Noodles
1/2 box while wheat
2 T olive oil
2 clove garlic
1 T crushed red pepper
3 T soy sauce- low sodium
2 T honey
1 t siracha
1/2 sweet onion
1 c spinach
1 large carrot cut into thin disks
Begin by cooking the pasta, then strain and set aside.
Warm the oil over medium heat, and add the crushed red pepper. Let the red pepper flakes sizzle for 2 min, and strain the oil from the pepper flakes into a small bowl. Discard the red pepper flakes. Add the honey, soy sauce and siratcha into the small bowl and stir together.
Add the onion, carrot and garlic into the pan and sauté for 5-7 until soft. Add in the past, spinach and sauce and stir to combine. Heat until the spinach wilts.
